Recipe: Lemon Cake With Frosting

LEMON CAKE WITH FROSTING WITHOUT ADDED SUGAR

A soft and delicious lemon cake topped with a creamy frosting in a healthier way. Easy to prepare and impossible to resist when it’s on the dessert table! This lemon cake is completely free from added sugar and is both simple and quick to bake.

 

INGREDIENTS

 

Cake:

  • 150 g butter
  • 3 eggs
  • 2 dl Use like sugar
  • 0.5 dl cream
  • 2 tbsp lemon juice
  • 1 lemon, grated zest
  • 2 tsp baking powder
  • 3 dl flour (gluten-free for those who wish)

Frosting:

  • 200 g Philadelphia cheese
  • 50 g butter
  • 3 tbsp Use like sugar
  • 1/2 lemon

    INSTRUCTIONS

     

    Cake:

    Preheat the oven to 175°C . Grease a baking pan. Melt the butter and let it cool slightly. In a bowl, whisk the eggs and Use Like Sugar until fluffy. Add the cream, melted butter, lemon juice, and lemon zest to the egg mixture. Mix the baking powder and flour, then fold this into the rest of the batter. Pour the batter into the prepared pan and bake for about 35-40 minutes. While the cake is baking, prepare the frosting.

     

    Frosting:

    In a bowl, mix melted butter, lemon juice, cream cheese, and Use Like Sugar until smooth. Place the frosting in the refrigerator until the cake is done! Once the cake is out of the oven, let it cool before spreading the frosting on top. Chill the cake for a little while, and then it’s ready to serve!
