CLASSIC SWEDISH PUNSCH-ROLL WITHOUT ADDED SUGAR

Punschrulle or also called "vacuum cleaner" is a pastry classic that is always on the Swedish coffee table. With a sweet taste of chocolate and arrackaroma, this is a big favorite for many. This recipe is completely without added sugar and is both easy and fun to make. Try it!
INGREDIENTS
Chocolate dough:
- 70 g room temperature butter
- 2 ½ dl almond flour
- 1 dl grated coconut
- ½ dl Use like sugar
- 2 tbsp Chocolate drink
- ½ tsp arrack flavoring
- ca 1-2 krm vanilla powder
Almond paste:
- 75 g butter
- 4 dl almond flour
- ½ dl Use like sugar
- 1 ½ tbsp fiberhusk
INSTRUCTIONS:
Chocolate dough:
Mix all the ingredients together in a bowl until the consistency is like a thick dough. Then divide the dough into 12 pieces and pull out the pieces into lengths. Place them on a cutting board or on a baking sheet and refrigerate while you make the almond paste.
Almond paste:
Mix the ingredients for the almond paste, leave to cool for a few minutes. Then place the mixture between two pieces of baking paper and roll out into an oblong square (not too thin), removing the top paper. Carefully coat the small chocolate lengths with the mixture. Help with the baking paper on which the almond paste has been rolled out, otherwise the almond paste can easily crack. If the almond paste breaks, it is easy to smooth it over with your fingers. Then roll up into a roll.
Chocolate:
Melt the chocolate, preferably in a narrow bowl (which makes it easier to get the chocolate on the edges of the vacuum cleaner), and then dip each side of the vacuum cleaner in this. Leave to set in the fridge on a plate lined with baking paper.
If you don't eat all the punsch-rolls at once, keep them in the fridge!
