Pickled red onion is a perfect accompaniment to pulled pork and other meat dishes, and the fact that you can now make it without sugar is fantastic, isn't it? Maybe you want to spice up your Friday taco? The onion turns pink when it's ready and gives the food an extra pop of color. The onion can be stored in the fridge for several weeks after cooking, great!

Peel and thinly slice the red onion and place it in a glass jar. Boil vinegar, water, Use like sugar and a pinch of salt. Then pour the mixture over the onions. Leave to cool and refrigerate for at least 4 hours.
