SUGAR-FREE PICKLED RED ONION
Recipe author: Malin Seijboldt
Pickled red onion is a perfect accompaniment to pulled pork and Friday tacos, for example. It adds sweetness and the onion turns pink when it's done, giving the food an extra splash of color. Pickled red onions can also be stored in the fridge for several weeks after cooking, which is great. This recipe for pickled red onions is also completely sugar-free but just as delicious.
INGREDIENTS
- 2 red onions
- 1 1/2 dl vinegar
- 1 dl water
- 1 1/2 dl Use like sugar
METHOD:
Peel the red onions and cut them into thin, preferably slightly longer slices and place them in a glass jar. Bring the vinegar, water, Use Like Sugar and a pinch of salt to the boil. Then pour the whole mixture over the onions in the glass jar. Stir a little with a fork so that the onions are completely mixed with the mixture.
Leave to cool and refrigerate for at least 4 hours to allow the onions to absorb the liquid properly. Ready to serve with your meal!
