This cake is incredibly light and smells amazing. Let the vanilla scent waft through the kitchen as it bakes, then top with fresh berries.
Angel food cake is a classic cake that goes home with all of us who love vanilla. The cake is both incredibly easy to bake and smells amazing. The best thing about this recipe is that it has no added sugar, which makes it healthier and can be enjoyed for afternoon coffee with a clear conscience. Let the vanilla aroma waft through the kitchen as the cake bakes, then top with fresh berries and a little chocolate before serving.
INGREDIENTS
Base:
- 5 egg whites (from large eggs)
- 1 ½ dl almond flour
- 1 dl Use like sugar
- 1 ½ tbsp arrowroot powder
- ½ tsp lemon juice
- 2 tsp vanilla powder
- ½ tsp salt
Topping:
- 2 dl whipped cream
- Berries
- Chopped Milk chocolate
- Peanuts n' fudge
- Lemon icing
METHOD:
First, set the oven to 160 degrees. Then whisk the egg whites and lemon juice together until it becomes a foam. Slowly add the Use Like Sugar while stirring and whisk to a firm "whisk". Mix all the dry ingredients and fold this into the egg whisk until it becomes a fine batter. Line a loaf pan with baking paper (do not grease it) and spread the batter in the pan. Bake in the lower part of the oven for about 20 minutes until the cake is firm. Remove the cake and turn it upside down on a plate and let it cool.
Whip the cream and spread it over the cake. Top with fresh berries and pieces of Milk Chocolate and Peanuts N' Fudge to add crunch and chocolate flavor. Perfect in combination with vanilla.
Ps. Arrowroot Powder can be found at the spice rack in grocery stores. Can also be replaced with potato flour/maizena.
