HEALTHY BLUEBERRY MUFFINS

This recipe for sugar-free, juicy and healthy muffins with blueberries is a must. Can be served just as well for afternoon coffee as a sweet snack. A tip when baking muffins "the American way" is to have the batter almost thick and keep them in the oven for a short time.

INGREDIENTS

  • 220 g flour (gluten-free for those who wish)
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 115 g butter
  • 150 g Use like sugar
  • 2 eggs
  • 120 g vanilla yogurt or creme fraiche
  • 6 drops of stevia vanilla
  • 50 ml milk
  • 250 g frozen blueberries

Blueberry mufins with no added sugar.

METHOD:

Mix the flour, bicarbonate of soda, baking powder and salt in a large bowl. Beat the butter, and Use like sugar with an electric whisk on a high speed until soft and creamy. Then turn the whisk down to medium-high speed and add the eggs. Next, add in the creme fraiche stevia drops with the flavor of vanilla. Add the dry ingredients and mix together with the electric whisk on a low speed. Last but not least, add the frozen blueberries.

Place 12 muffin tins on a baking sheet and fill the tins with the batter all the way to the top. Bake for 5 minutes at 220°C, then reduce the temperature to 180°C and bake for about 15-20 minutes more. Let the muffins cool for a little while and then they are ready to serve.
