Recipe Roll cake

Roll cake with coffee is a classic at grandma's house, try making one yourself next time. You often have the ingredients you need at home, it is easy to bake and can be flavored with most things.


Roll cake:

  • 4 eggs
  • 1 2/3 dl almond flour
  • ½ dl Use like sugar
  • 1 tablespoon fiber husk
  • 1 tsp baking powder
  • 2 tsp vanilla powder

Chocolate filling:


      Preheat the oven to 175 degrees. Whisk the eggs and Use like sugar for a few minutes with an electric whisk. Mix the dry ingredients and then stir this into the "egg whip". Place a sheet of baking paper in the bottom of a long pan and pour in the batter so that it is about 20X30 cm. Remember not to spread the batter too thin or it will break easily. Bake in the middle of the oven for about 12-15 minutes. When the rolled cake base is removed, turn it upside down on another piece of baking paper. Leave for a few minutes before carefully removing the first sheet.

      Chocolate filling
      Melt the butter and chocolate gently so it doesn't burn (I do this in the microwave). Stir in the mascarpone and Use like sugar. Mix to a smooth consistency. Spread the filling gently on the bottom (heat the filling slightly if the consistency is too hard). Roll up from short side to short side so that the cake is as thick as possible. Wrap in plastic wrap and chill in the fridge for at least 30 minutes.

      Cut the roll cake into slices, place on a cake plate, layer with cream and then top with berries, lemon balm and chopped chocolate.
